I noticed the last line in the screenshot below today. It made me wonder: does the word "Friday" have to be changed each day so that it doesn't say, We'll see you in your inbox first thing Friday morning in Friday's email?
Are there 5 templates, one for each day of the week? What if there was a snippet that stored the day of the week and updating the snippet would automatically update the footer? Would it be worth having a snippet, if that is the only place the day of the week +1 is mentioned in the email? I don't think a global find and replace would be without its problems so, off-hand, it seems like it would be an item on a checklist that would need to be meticulously processed every day. It would certainly be possible to process that checklist each day. There could also be some coding that generates the shell for the email that includes checking the current date +1 and setting that in the footer - I really don't know. It's fun to think about!
